Margarita chicken tacos. I’m not sure what possessed me to want to cook chicken in tequila, but I had been thinking about it for quite a while before trying it out this past week. Maybe I just really wanted margaritas and subconsciously felt maybe food was a healthier choice? I’m not sure, but I am quite pleased with how this really simple recipe turned out. Plus, let’s face it, you probably have a random bottle of tequila in your liquor cabinet that you will never drink.

On your own? This will feed you for a couple of meals and is great for lunch as a taco salad, too. In the recipe, I’ve included the taco toppings that I used and enjoyed, but feel free to use your own favourite toppings as well. That might be my favourite part of tacos – they are pretty flexible.

There isn’t a whole lot of prep for these margarita chicken tacos, which leaves more time for you to have a cerveza or a margarita (or both).

I will admit, when you pour the tequila into the pan, your nostrils will scream a bit, but as you cook it down, it becomes a lot less fragrant and you’re left with a really nice flavour from the cumin, tequila and fresh lime juice. Another thing I recommend adding, for a little bit of a bite is some jalapeno cheddar cheese, or even some hot sauce or salsa. I’m not huge into spicy food, so the cheese kicked it up enough notches for me.

Now, this is the part that is going to make or break your tacos. I feel very strongly about hard vs soft shell tacos. I am pro hard shell. Yes, I know they break and you end up eating it with a fork… the hard shells just taste SO MUCH BETTER! It is my most humble opinion that flour tortillas that have been sitting on a shelf in a weird metallic (or plastic) package for weeks, taste exactly like… something that’s been sitting on a shelf in a weird package for weeks. Sorry, not sorry. Hard shells forever! HOWEVER, I can be swayed to eat soft shells when they are homemade. Which aren’t hard to make unless you actually want them to be nice, perfect circles, cause that’s impossible.

Now that I’ve subtly shared my opinion on taco shells… you can easily top nachos, quesadillas or tacos with this margarita chicken and be on your merry way!

Margarita Chicken Tacos

Ingredients

  • 1/2 kg ground chicken
  • 1/2 cup tequila
  • 1 fresh lime plus more for garnish
  • 2 tsp cumin
  • 1 tsp garlic powder
  • salt and pepper to taste (lots of salt, it is a margarita, afterall!)
  • Possible toppings: tomato avocado, iceberg lettuce, cheese
  • Your favourite taco shells

Instructions

  • Heat frying pan on medium, add chicken
  • Season with salt and pepper
  • Allow chicken to brown a little before adding juice of 1/2 lime, continue cooking
  • After about 10 minutes, add tequila and continue cooking down
  • Add cumin and garlic powder
  • Continue cooking, meanwhile prepping any veggies you want for your tacos
  • Add second 1/2 lime juice and continue cooking until there isn't any extra liquid in your pan
  • Assemble your tacos, enjoy!
