Remove Italian sausages from casings and begin to brown in a medium sized soup pot
Dice yellow onion and green bell pepper, add both to pot to cook with sausage. Cook down for about 5 minutes
Add one can of diced tomatoes, including the juices and then add two cans-worth of water. Swish the water around to make sure you get all of the tomato juice!
Add one can of white beans, including the juices
Add 2 handfuls fresh spinach
Stir well and add 2 bay leaves and 2 teaspoons dried parsley
Simmer for at least an hour
Serve with parmesan or mozzarella cheese
