White Bean and Italian Sausage Soup

A hearty soup that covers all of the bases.

Ingredients

  • 500 g Hot Italian Sausage casings removed
  • 1 x yellow onion
  • 1 x green bell pepper
  • 1 x 796 mL can diced tomatoes plus two cans worth water
  • 1 x can white beans
  • 2 handfuls fresh spinach
  • 2 bay leaves
  • 2 tsp dried parsley
  • Parmesan or mozzarella cheese to serve

Instructions

  • Remove Italian sausages from casings and begin to brown in a medium sized soup pot
  • Dice yellow onion and green bell pepper, add both to pot to cook with sausage. Cook down for about 5 minutes
  • Add one can of diced tomatoes, including the juices and then add two cans-worth of water. Swish the water around to make sure you get all of the tomato juice!
  • Add one can of white beans, including the juices
  • Add 2 handfuls fresh spinach
  • Stir well and add 2 bay leaves and 2 teaspoons dried parsley
  • Simmer for at least an hour
  • Serve with parmesan or mozzarella cheese
