White Bean and Hot Italian Sausage Soup

Your Wish for Soup is My Command

When I put out a question sticker on Instagram asking what recipes you were all interested in, there were a couple of requests for soup. Soup is not something I have really had much success making without a recipe but I bit the bullet and here we are with a White Bean and Hot Italian Sausage Soup. Clever name, I know.

It’s Soup Season

This is a hearty soup that will get you through these cold, winter days and if you’re living in a lockdown like we are, it may be just what you need. I use Hot Italian Sausage and the soup definitely has some bite to it – so you could do half and half (hot and mild) or just stick to mild on it’s own. You could also use medium if you’re lucky enough to find it.

Pair with a nice crusty piece of bread – maybe make a day of it and bake some bread yourself! I have a pizza stone that I bake my bread on – how do you bake yours?

Versatility is My Middle Name

While I was testing this out, I decided that if I left out the two cans of water, this would be a great sauce. Heck, I may even make it like this one day and fire up some peppers and onions to make The Ultimate Meatball Sandwich.. without the meatballs!

This white bean and hot Italian sausage soup is easy enough – and the best part is that you don’t even need to deal with broth. I always use a bouillon cube for recipes that call for it – that way I don’t have to open a carton and waste half of it. But the sausage gives off so much flavour, you can leave the half empty broth cartons and bouillon cubes behind!

I am sure some of you are over achievers who think “Hey, I’m going to try using dried beans for this instead!” Take my advice, use a can!

Another favourite part about this recipe? Naturally, it is theft that it makes enough to eat lunch and dinner…. and there’s still some to freeze for another time.

White Bean and Italian Sausage Soup

A hearty soup that covers all of the bases.

Ingredients

  • 500 g Hot Italian Sausage casings removed
  • 1 x yellow onion
  • 1 x green bell pepper
  • 1 x 796 mL can diced tomatoes plus two cans worth water
  • 1 x can white beans
  • 2 handfuls fresh spinach
  • 2 bay leaves
  • 2 tsp dried parsley
  • Parmesan or mozzarella cheese to serve

Instructions

  • Remove Italian sausages from casings and begin to brown in a medium sized soup pot
  • Dice yellow onion and green bell pepper, add both to pot to cook with sausage. Cook down for about 5 minutes
  • Add one can of diced tomatoes, including the juices and then add two cans-worth of water. Swish the water around to make sure you get all of the tomato juice!
  • Add one can of white beans, including the juices
  • Add 2 handfuls fresh spinach
  • Stir well and add 2 bay leaves and 2 teaspoons dried parsley
  • Simmer for at least an hour
  • Serve with parmesan or mozzarella cheese

  • I made this soup to meal prep for lunches this week and it was a great choice as colder winter temps are setting in!!! I opted for only one can of water — I wanted more of a stew than soup and added some garlic and onion powder and basil to taste. This soup is a healthy spin on winter comfort food! Will 100% be adding it to my regular recipe rotation!❤️
